Ingredients
2 egg whites
4 egg yolks
80g sugar
400g Mascarpone cheese
300g Sponge Fingers
350ml strong coffee
40g cocoa powder or dark chocolate
1 tbsp Amaretto
Instructions
Prepare the coffee dip by mixing the coffee with sugar and Amaretto liquor.
In a bowl, whisk 2 egg whites until stiff peaks form.
In a separate bowl, add the egg yolks and sugar, whisking until the mixture is pale and creamy.
Gradually add the mascarpone cheese (take the mascarpone out of the refrigerator half an hour before using it) and combine until you achieve a smooth cream. (You can use a stand mixer fitted with a paddle attachment for this step.)
Carefully fold in the egg whites.
Dip each sponge finger briefly into the coffee mixture. It's important to dip quickly to avoid oversaturating the sponge fingers, which could make them soggy. Place one layer of dipped sponge fingers in a tray, then add half of the cream mixture and sprinkle with cocoa powder. Add another layer of sponge fingers, then top with the remaining half of the cream.
Finish by sprinkling cocoa powder on top, cover with cling film, and refrigerate overnight to set.
Use a sharp knife to slice the chilled tiramisu and serve.
