Ingredients

  • 3–4 sausages of your choice (crumbled)

  • 3 garlic cloves (grated)

  • 1 cup chopped tomatoes (or blended, optional)

  • 1 tsp sriracha sauce (adjust to taste)

  • ½ cup chicken stock

  • 1 tbsp sunflower or vegetable oil

  • 1/3 cup double cream or heavy cream

  • ¼ cup grated Parmesan cheese

  • 10 g cornstarch (for slurry)

Instructions:

  1. Cook the Sausage:

Heat 1 tbsp sunflower or vegetable oil in a large pan over medium heat. Add 3–4 crumbled sausages and fry until golden and cooked through. Remove the sausage and set aside.

  2. Make the Sauce:

Add the grated garlic cloves to the same pan and sauté for about 1 minute until fragrant. Add the chopped tomatoes, chicken stock, sriracha sauce, salt, and pepper. Stir well and let it simmer for 5–7 minutes.

  3. Thicken the Sauce:

Make a slurry with 10 g cornstarch and water. Add it to the sauce little by little until it reaches your desired thickness.

  4. Add Cream and Sausage:

Stir in the double cream, cooked sausage, and grated parmesan cheese. Mix well until the sauce is creamy and smooth.

  5. Combine with Pasta:

Add your cooked pasta (penne, conchiglie, or spaghetti) to the sauce. Toss everything together until the pasta is coated evenly.

  6. Serve:

Garnish with additional parmesan cheese and serve immediately.

Tips and Tricks for Making the Best Spicy Sausage Pasta

1. Choose the Right Sausage:

  • For the best flavour, use high-quality sausage. You can go with spicy Italian sausage for extra heat, or choose a mild sausage if you prefer a less intense spice level. You can also opt for turkey or chicken sausage for a leaner version.

2. Sauté the Sausage Properly:

  • Make sure to break up the sausage into small crumbles while sautéing, allowing it to get nice and crispy on the edges. This adds a rich flavour to the dish.

3. Add Vegetables for Extra Flavor:

  • Consider adding bell peppers, onions, or spinach to the sauce. These vegetables add both flavour and nutrition to the dish. Sauté the onions and peppers with the sausage for a deeper, more flavour.

4. Cook the Pasta Al Dente:

  • Be careful not to overcook the pasta. Cook it al dente (firm to the bite) to prevent it from becoming mushy when mixed with the sauce. Reserve a little pasta water to help thicken the sauce and help it adhere to the pasta.

5. Finish the Dish with Parmesan:

  • A generous sprinkle of freshly grated Parmesan cheese on top just before serving will add a wonderful umami flavour and richness to the dish.

6. Pair with a Side Salad:

  • To balance out the heat and add some freshness, serve your Spicy Sausage Pasta with a simple side salad or roasted vegetables.
