green/red bell pepper or (Italian green pepper)
150 cucumber
1 tbsp olive oil
salt to taste

Begin by thoroughly washing and chopping the tomatoes, cucumber, and bell pepper.
Next, peel a clove of garlic, slice it in half, and remove the germ or the inner shoot to reduce bitterness.
Blend all the ingredients using a hand blender or a traditional blender until you achieve a smooth texture.
Optionally, for a finer soup, strain the mixture through a colander, pressing down with a spatula to extract as much liquid as possible.
Stir in 1 tablespoon of extra virgin olive oil and season with salt to taste. Refrigerate the gazpacho for a few hours to allow the flavours to meld.
