Ingredients
3 potatoes
4 strips of streaky smoked bacon
5 eggs
1 small onion
1/3 cup heavy cream or full-fat milk
1/4 cup grated parmesan cheese
5 gr chives
Salt & pepper to taste
Instructions
Start by peeling the potatoes and cutting them into small, even-sized pieces. Place them in a pot, cover with water, and bring to a boil. Let them simmer for 4-5 minutes, then drain well.
In a non-stick frying pan, heat a little olive oil over medium heat. Add the bacon and fry until crispy. Then, transfer the bacon to a plate lined with paper towels.
To the pan with the remaining bacon grease, add the potatoes. Cook for 5 minutes, then add the chopped onion (add a little more oil if needed) and cook until the potatoes are very tender and browned, and the onion is translucent. Season with salt and pepper.
Meanwhile, in a medium bowl, whisk together the eggs, 1/3 cup of heavy cream, 1/4 cup of Parmesan cheese, salt, and pepper until well combined.
In an oven-safe dish lined with baking paper, add the potatoes and bacon, and pour the egg mixture over them. Sprinkle with finely chopped chives. Bake in a preheated oven at 200°C (392°F) for about 12-15 minutes.
Serve with a salad.
