Ingredients

  • 250g boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 15g butter

  • 225g mushrooms, sliced

  • 3 garlic cloves, minced

  • ½ cup chicken stock

  • ½ cup double cream (or heavy cream)

  • ¼ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • Salt & black pepper, to taste

Instructions

1. Heat the Pan

Warm the olive oil and butter in a large skillet over medium-high heat.

2. Sear the Chicken

Cut the chicken breast in half. Season with salt and pepper. Add to the pan and cook for 3–4 minutes per side, until golden and cooked through. Remove from the pan and set aside.

3. Sauté Mushrooms & Garlic

In the same skillet, add the sliced mushrooms and sauté for 2–3 minutes, until lightly browned. Add the minced garlic and cook for another 30 seconds—watch carefully to avoid burning.

4. Deglaze & Add Cream

Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Reduce heat to medium, then stir in the cream, Parmesan cheese, and Italian seasoning. Season with salt and pepper to taste.

5. Combine & Simmer

Return the chicken to the skillet. Spoon the sauce over the chicken and let everything simmer for 2–3 more minutes, or until the sauce thickens to your liking.

6. Serve & Enjoy

Remove from heat and serve hot with pasta, mashed potatoes, rice, or crusty bread to soak up the sauce.
