Ingredients

  • 2 cups rolled oats

  • 3 Nectarines or peach

  • 2 cups unsweetened almond milk or any milk

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • Pinch of salt

  • ¼ cup of honey

  • 2 tbsp Sunflower oil or vegetable oil

Instructions

  1. Preheat the oven to 180°C / 356°F and grease an 8 x 8-inch (20 cm x 20 cm) baking tray with a piece of butter.

  2. In a medium mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon. Mix well, then add the unsweetened almond milk (or any preferred milk). Let the mixture rest for 5 minutes.

  3. Meanwhile, dice two nectarines into small pieces and slice the remaining two into thin slices for the topping.

  4. Add the diced nectarines to the oat mixture, along with the sunflower (or vegetable) oil and honey (or sweetener of your choice). Mix everything together.

  5. Pour the mixture into the prepared baking tray and arrange the nectarine slices on top. Bake it at 180°C / 356°F for about 35-40 minutes or until golden brown.
