Miguelitos de la Roda are light and crispy Spanish pastries filled with smooth vanilla pastry cream and finished with a generous dusting of icing sugar. Made with ready-rolled puff pastry, they look impressive but are surprisingly simple to prepare at home.

The contrast between the flaky pastry and cool, creamy custard makes these little pastries difficult to resist. They are perfect for afternoon coffee, family celebrations, dessert tables, or whenever you need an easy Spanish sweet treat. Prepare the pastry cream in advance, then bake and assemble the Miguelitos shortly before serving for the best texture.

Ingredients

Puff Pastry

  • 1 sheet ready-rolled puff pastry, approximately 320 g

  • 1 beaten egg, for brushing (optional)

  • Icing sugar, for dusting

Vanilla Pastry Cream

  • 500 ml whole milk (2 cups plus 2 tbsp)

  • 4 large egg yolks

  • 90 g caster sugar (about ½ cup)

  • 45 g cornflour or cornstarch (about 6 tbsp)

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions

1. Warm the Milk

Pour the milk into a medium saucepan and add the vanilla extract. Warm it over medium heat until steaming, but do not allow it to boil. Remove the pan from the heat.

2. Mix the Egg Yolks

Place the egg yolks, caster sugar, cornflour, and a small pinch of salt in a heatproof mixing bowl. Whisk until the mixture is smooth, thick, and free from lumps.

3. Temper the Egg Mixture

Slowly pour a small amount of the warm milk into the egg-yolk mixture while whisking continuously. Continue gradually adding the remaining milk and whisking. Adding it slowly prevents the egg yolks from scrambling.

4. Cook the Pastry Cream

Pour the mixture back into the saucepan and place it over medium-low heat. Cook while whisking constantly, making sure to reach the bottom and corners of the pan. Continue until the pastry cream becomes thick, smooth, and glossy. Once it begins to bubble gently, cook for approximately 1 more minute to ensure the cornflour is fully cooked.

5. Chill the Pastry Cream

Transfer the pastry cream to a clean bowl. Cover it immediately with cling film or reusable food wrap, pressing the wrap directly against the surface. This prevents a skin from forming. Leave it to cool slightly, then refrigerate for at least 2 hours or until completely cold.

6. Prepare the Puff Pastry

Preheat the oven to 200°C fan (220°C conventional) / 425°F. Unroll the puff pastry and keep it on its baking paper. For smaller Miguelitos, cut the pastry into 12 equal rectangles. For larger pastries, cut it into 9 equal squares. Avoid stretching or pressing down on the pastry, as this can prevent it from rising properly.

7. Bake the Pastry

Transfer the pastry pieces, still on the baking paper, to a large baking tray. Leave a little space between each piece.

Brush the tops lightly with beaten egg, if using. Be careful not to let the egg run down the cut edges, as this can seal the layers together. Bake for 12–15 minutes, or until the pastries are well risen, crisp, and golden brown. Transfer them to a wire rack and leave them to cool completely.

8. Prepare the Filling

Remove the cold pastry cream from the refrigerator. Whisk it briefly until smooth and creamy. Transfer it to a piping bag fitted with a plain or star-shaped nozzle, or leave it in the bowl if you prefer to use a spoon.

9. Fill the Miguelitos

Carefully split each cooled pastry horizontally using a small serrated knife. Pipe or spoon a generous layer of pastry cream onto each bottom half, then gently replace the pastry tops. Avoid pressing down too firmly, as the cream may squeeze out.

10. Finish and Serve

Dust the Miguelitos generously with icing sugar just before serving. Enjoy them immediately for the best contrast between the crisp puff pastry and creamy vanilla filling.

Tips and Tricks

✅ Make the pastry cream first because it must be completely cold before filling the pastries.

✅ Whisk continuously while cooking the pastry cream to prevent lumps and stop it from catching on the bottom of the pan.

✅ Press the food wrap directly onto the pastry cream to prevent a skin from forming as it cools.

✅ If the chilled cream feels very firm, whisk it briefly until it becomes smooth enough to pipe or spoon.

✅ Keep the puff pastry cold until you are ready to cut and bake it. Cold pastry rises more evenly and produces crisp, defined layers.

✅ Cut the pastry with a sharp knife or pizza cutter, using clean downward cuts rather than dragging the blade through it.

✅ Do not flatten or roll out ready-rolled pastry, as this can compress its layers.

✅ Make sure the baked pastries are completely cool before filling them. Warm pastry can soften the cream and make the layers soggy.

✅ Fill the Miguelitos close to serving time for the crispest texture.

✅ Dust with icing sugar immediately before serving, as it can dissolve after sitting on the pastry.
