Ingredients

Meatballs

  • 250g Minced pork

  • 250g Minced Beef

  • 1 egg

  • 1 white roll or slice of bread

  • 200 ml milk or water

  • 60 g parmesan cheese - grated

  • ½ tsp ground cumin

  • 3 garlic cloves - minced

  • Small bunch of parsley – finely chopped

  • Salt & pepper

Stew

  • 1 large onion or 2 medium – diced

  • 4 garlic cloves – chopped

  • 400 -500 ml chicken stock

  • 700 g potatoes – (white potatoes)

  • 1/8 tsp food colouring

  • Salt and pepper

Instructions

  1. Begin by soaking the bread in milk.

  2. In a large bowl, combine minced pork and beef with minced garlic, grated Parmesan cheese, chopped parsley, ground cumin, salt, and pepper. Squeeze the excess liquid from the bread before adding it to the bowl. Mix well until all ingredients are thoroughly combined.

  3. With clean hands, shape the mixture into small meatballs, each slightly larger than a walnut.

  4. Lightly coat the meatballs with flour, tapping off any excess.

  5. In a pan, heat a little oil. Once hot, add the meatballs in batches and fry until browned on all sides.

  6. In a large pot or casserole, use the same oil used for frying the meatballs. Add one large diced onion and sauté until soft. Then add three chopped garlic cloves and fry until fragrant, about 2 minutes. Add diced potatoes and fry for 5 minutes, stirring frequently.

  7. Add the meatballs back into the pot along with chicken stock and food colouring. Season with salt and pepper. Cover with a lid, bring to a boil, and then let it simmer until the potatoes are fully cooked.

Note: If desired, you can add fresh or dried herbs like rosemary or thyme for additional flavour.
