Ingredients:

  • 2 chicken breasts, halved lengthwise

  • 80g smoked bacon, diced

  • 1 medium onion, thinly sliced

  • 3 garlic cloves, grated

  • 2 tbsp tomato paste

  • 1 tbsp Dijon mustard

  • 1 tbsp sun-dried tomato paste

  • ½ tsp dried oregano

  • 1 cup chicken stock

  • ½ cup double cream (or heavy cream)

  • Salt and pepper, to taste

  • ¼ cup grated Parmesan cheese

Instructions:

1. Prep Your Ingredients

Slice the onion, dice the bacon, and halve the chicken breasts horizontally to create thin cutlets. Season the chicken with salt, pepper, and a sprinkle of garlic powder.

2. Cook the Bacon

Heat a drizzle of oil in a large pan over medium-high heat and cook the diced bacon until just crispy. Remove and set aside.

3. Sear the Chicken

In the same pan add a knob of butter then sear the chicken for 3–4 minutes on each side until golden and cooked through. Remove and set aside.

4. Sauté the Aromatics

Add the sliced onion to the pan and cook for 3–4 minutes until translucent. Stir in the grated garlic and cook for 30 seconds.

5. Build the Sauce

Add tomato paste and Dijon mustard. Stir until fragrant and thickened slightly. Pour in the chicken stock and cream. Stir in sun-dried tomato paste and oregano.

6. Add Cheese & Combine

Season with salt and pepper to taste, then stir in the grated parmesan until melted and smooth.

7. Finish with Chicken & Bacon

Return the chicken and bacon to the skillet. Simmer everything together for about 5 minutes, or until the sauce is thick and coats the chicken beautifully.
