This Hot Honey Paprika Chicken Tray Bake is an easy one-pan dinner packed with smoky, sweet, and gently spicy flavours. Tender chicken thighs are roasted with baby potatoes, red pepper, and red onion before being coated in a sticky hot honey and sriracha glaze.

The vegetables are given a short head start in the oven so the potatoes become tender without overcooking the chicken. Everything then finishes together in the same tray, making this a simple and satisfying meal for two with very little washing up.

Ingredients

Chicken Tray Bake

  • 4 boneless, skinless chicken thighs

  • 350 g baby potatoes, halved (about 12 oz)

  • 1 red pepper, thickly sliced

  • ½ red onion, cut into wedges

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp dried oregano

  • ½ tsp salt, or to taste

  • Freshly ground black pepper, to taste

Hot Honey Glaze

  • 1½ tbsp honey

  • ½ tbsp sriracha

  • ½ tsp lemon juice

  • ¼ tsp smoked paprika

  • Small pinch of salt

Instructions

1. Preheat the Oven

Preheat the oven to 200°C fan (220°C conventional) / 425°F. Line a large roasting tray with baking parchment for easier cleaning, if desired.

2. Prepare the Paprika Seasoning

Add the olive oil, smoked paprika, garlic powder, dried oregano, salt, and black pepper to a small bowl. Mix until everything is well combined.

3. Season the Chicken

Pat the chicken thighs dry with kitchen paper. Place them in a bowl and add half of the paprika seasoning. Rub the mixture over the chicken until every piece is evenly coated, then set aside while you prepare the vegetables.

4. Start Roasting the Vegetables

Add the halved baby potatoes, sliced red pepper, and red onion wedges to the prepared roasting tray. Pour over the remaining paprika seasoning and toss until the vegetables are evenly coated. Arrange them in a single layer. Cover the tray tightly with foil and bake for 15 minutes. This gives the potatoes time to begin softening before the chicken is added.

5. Make the Hot Honey Glaze

While the vegetables are cooking, combine the honey, sriracha, lemon juice, smoked paprika, and a small pinch of salt in a bowl. If the honey is very thick, warm the mixture for 10–15 seconds in the microwave, then stir until smooth. Divide the glaze between two clean bowls. One portion will be brushed over the chicken, while the untouched portion will be used for serving.

6. Add the Chicken

Carefully remove the tray from the oven and take off the foil. Stir the vegetables, then arrange the seasoned chicken thighs on top. Cover the tray again and return it to the oven for another 15 minutes.

7. Glaze the Chicken

Remove the foil and brush one portion of the hot honey glaze generously over the chicken thighs. Return the tray to the oven uncovered and bake for another 5–8 minutes, until the glaze is sticky and glossy and the chicken is fully cooked. The thickest part of the chicken should reach an internal temperature of 74°C/165°F.

8. Rest and Serve

Remove the tray from the oven and allow the chicken to rest for 5 minutes. Drizzle the reserved hot honey glaze over the chicken. Finish with a squeeze of fresh lemon juice and chopped parsley, if desired. Serve directly from the tray while the chicken is warm and the glaze is still sticky.
