Ingredients
2 1/2 cup whole rolled oats
1 large banana or 2 small
1 cup Blueberries
1 cup Raspberries
1 egg
1 cup almond milk or any milk
1/4 cup milled mixed seeds or flax seeds
1/2 tsp baking powder
2 tbsp honey
1 tbsp sunflower oil
1 lemon zest
Instructions
Preheat your oven to 180°C/350°F.
Begin by placing 1 cup of oats into a food processor. Blend until you achieve a fine oat flour consistency.
In a large bowl, mash the bananas, then incorporate the egg, almond milk, and honey (add more to taste if you prefer a sweeter result; with the listed quantities, the bars will not be overly sweet). Mix in the sunflower oil and lemon zest.
In a separate bowl, combine 1 ½ cups of whole oats with the oat flour you prepared and the baking powder, along with your choice of milled mixed seeds or flaxseeds.
Gradually add the dry ingredients to the wet mixture, stirring until well combined.
Gently fold in the blueberries and raspberries.
Line a baking tray with parchment paper and spread the mixture evenly across it.
Bake in the preheated oven for 30 – 40 minutes, or until the top is golden brown.
Once ready, remove it from the oven and let it cool completely on the tray. Then cut into 12 equal bars and enjoy.
