Ingredients
320g all-purpose flour, plus extra for dusting
3 tbsp sugar
1/2 tsp salt
7g dry yeast
150ml whole milk
50g unsalted butter
1 egg
1 lemon zest
Sugar glaze
1 cup icing sugar
1/2 tsp vanilla extract
3 tbsp milk
Instructions
In a cup, combine 150 ml of whole milk with 1 tsp of sugar and 7g of dry yeast. Mix well and set aside for 15 minutes to activate the yeast.
In a large bowl, whisk together the flour, sugar, and salt to blend all the dry ingredients. Then add the egg, melted butter, lemon zest, and the activated yeast mixture.
Mix the ingredients and then knead the dough on a floured work surface for 10 minutes. Alternatively, you can use a stand mixer set to medium-low speed to knead the dough for 5 minutes.
Transfer the dough to a greased bowl, cover with cling film or a kitchen towel, and allow it to rise in a warm place for 1 hour or until it has doubled in size.
Turn the risen dough out onto a floured surface and gently roll it to about 1/2-inch thickness.
Cut out the donuts using a donut cutter or two different sizes of round cutters.
Place the donuts on some baking paper, cover them with cling film or a tea towel, and let them rest for 20-30 minutes.
Preheat the air fryer and spray the basket with oil spray. Carefully place the donuts in the basket, spray the tops with oil, and bake at 190°C (374°F) for 5 minutes.
For the sugar glaze, mix the icing sugar with milk and vanilla extract.
Once the donuts have cooled for a few minutes, glaze them and set them on a wire rack over a rimmed baking sheet to allow the excess glaze to drip off.
