This Greek chicken bowl is a quick, healthy dinner packed with lemony chicken, fresh veggies, and feta—ready in 30 minutes!

This Greek Chicken Bowl is everything you want in a healthy meal—vibrant, protein-packed, and bursting with Mediterranean flavour. Juicy marinated chicken, herbed basmati rice, crisp cucumbers, juicy tomatoes, olives, and creamy feta… all in one easy, delicious bowl!

Servings: 2 - Prep: 10 min - Cook: 20 min - Total: 30 minutes

Ingredients:

  • 250g chicken thighs or breast, cut into 2 cm cubes

  • 1 Tbsp olive oil

  • 1 Tbsp lemon juice (juice of ½ lemon)

  • 2 garlic cloves, minced

  • ½ tsp dried oregano

  • ¼ tsp sea salt

  • Pinch of black pepper

  • 1 pouch (250g) Tilda Lime & Coriander Basmati Rice (microwave 2 min at 800W)

  • ½ large cucumber, diced

  • 100g cherry tomatoes, halved

  • 25g pitted green or black olives, sliced

  • 50g crumbled feta cheese

  • Fresh coriander, chopped (for garnish)

  • (Optional: Dollop of Greek yoghurt for topping)

Instructions:

1. Marinate the Chicken

In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the cubed chicken and stir well to coat. Let it marinate for 30 minutes—or for at least 5 minutes if you’re short on time.

2. Cook the Chicken

Heat a little olive oil in a pan over medium heat. Add the chicken pieces (reserve any leftover marinade) and sauté for 4–5 minutes, stirring occasionally, until golden and fully cooked. Pour in the reserved marinade and cook for an additional 30 seconds to glaze the chicken.

3. Prepare the Base

Microwave the Tilda Lime & Coriander rice pouch for 2 minutes (800W), or substitute with any cooked brown rice, white rice, or quinoa.

4. Assemble the Bowl

In a serving bowl, layer the rice as the base. Top with the cooked chicken, diced cucumber, halved cherry tomatoes, and sliced olives. Sprinkle with crumbled feta and chopped coriander. Add a dollop of Greek yoghurt if desired.
