Ingredients:

  • 200g long rice or basmati rice

  • 1 carrot or any other vegetable like (peas, broccoli)

  • 50 cured ham (serrano ham)

  • 2 eggs

  • Soy sauce

  • Sunflower oil

Instructions:

  1. Start by washing and cooking the rice. Let it cool if possible. Even better if you can make the rice the day before and place it in the fridge.

  2. Cut the carrots into small cubes. You can use any vegetables you like (broccoli, peas, etc.).

  3. Heat oil in a wok or pan over medium heat. Add the carrots and fry for 2 minutes. Then add 50 g cured Serrano ham (the cured ham will give the rice a smoky flavour) and fry for another 2 minutes. Set aside on a plate.

  4. Add a little bit more oil to the pan over high heat. Add the rice and fry for a few minutes. Then, make a little space in the centre and add 2 eggs. With a spatula, start to mix the egg in the centre first, then slowly mix it into the rice and fry until cooked.

  5. Mix in the carrots and ham, add soy sauce, mix well, and serve with lemon chicken, for example.
