Ingredients
200 g dark chocolate
100 g sugar
4 eggs
100 ml double cream
2 tbsp cocoa powder
pinch of salt
Instructions:
Melt the Chocolate: Place 200 g of dark chocolate in a heatproof bowl over a pan of simmering water. Stir occasionally until melted and smooth. Remove from heat and let it cool slightly.
Prepare the Batter: In a mixing bowl, whisk 4 eggs, a pinch of salt, and 100 g of sugar until pale, fluffy, and doubled in volume. Slowly add the melted chocolate to the egg mixture, stirring constantly. Sift in 2 tbsp of cocoa powder and mix gently.
Bake the Brownies: Preheat the oven to 180°C (356°F). o Pour the batter into a 20 x 20 cm (8 x 8 inch) baking tray lined with parchment paper.
Bake for 20-25 minutes. The edges should be set, but the centre will have a slight wobble for that fudgy texture.
Cool and Serve: Allow the brownies to cool completely in the baking tray. o Slice into squares and enjoy!
