Ingredients:

For the Traybake:

  • 250g all-purpose flour (about 2 cups)

  • 50g sugar (¼ cup)

  • 1 tablespoon baking powder

  • 1 teaspoon mixed spice (or: ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp allspice)

  • ½ teaspoon salt

  • 60g cold butter, cubed or margarine, about ¼ cup)

  • 120ml milk (½ cup)

  • 1 egg

  • ½ cup raisins or currants (optional but traditional)

For the Icing Cross:

  • ½ cup powdered sugar

  • 1–2 teaspoons milk (Adjust for piping consistency)

Instructions:

1. Preheat & Prepare Your Tray

Preheat your oven to 375°F (190°C). Lightly grease or line an 8×8 or 9×9-inch baking tray with parchment paper.

2. Mix the Dry Ingredients

In a mixing bowl, whisk together:

  • Flour

  • Sugar

  • Baking powder

  • Mixed spice

  • Salt

3. Cut in the Butter

Add the cold, cubed butter. Use a pastry cutter, fork, or your fingertips to rub the butter into the flour until the texture resembles coarse crumbs (pea-sized bits are fine).

4. Add Wet Ingredients & Fruit

In a separate bowl or jug, whisk together the milk and egg. Pour into the dry mix and stir gently until just combined. Fold in raisins or currants if using.

5. Press the Dough Into the Tray

The dough will be soft and a little sticky—don’t overwork it! Press it gently and evenly into your prepared baking tray.

6. Bake

Bake for 15–18 minutes, or until golden on top and a toothpick comes out clean. Let it cool in the pan for a few minutes.

7. Make the Icing Cross

Mix powdered sugar and milk in a small bowl until it forms a thick but pipeable icing. Transfer to a piping bag or zip-top bag and pipe crosses over the cooled traybake. You can also simply drizzle in a cross pattern if you prefer a rustic look.

8. Cool & Slice
