Servings: 9 - Prep: 15 min - Cook: 30 min - Total: 45 minutes

Ingredients:

  • 220g unsalted butter, melted

  • 180g sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 60g cocoa powder, sifted

  • 100g all-purpose flour

  • ¼ tsp salt

  • ¼ cup chocolate chips (optional, for extra decadence)

  • 1 cup mini chocolate eggs (reserve some for topping)

Instructions:

1. Preheat & Prep

Preheat your oven to 180°C (350°F).

Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy lifting.

2. Mix the Wet Ingredients

In a large bowl, whisk together the melted butter, sugar, eggs, and vanilla extract until smooth and glossy.

3. Add Dry Ingredients

Sift in the cocoa powder, flour, and salt. Gently fold into the wet mixture until just combined. Be careful not to overmix to keep the brownies fudgy.

4. Fold in the Chocolate

Stir in the chocolate chips (if using) and most of the mini chocolate eggs, reserving a handful for the topping.

5. Bake

Pour the batter into the prepared pan and smooth the surface. Sprinkle the remaining mini eggs over the top and press them in gently.

6. Bake & Cool

Bake for 25–30 minutes, or until the edges are set and the centre is slightly soft and fudgy. Allow to cool completely in the pan before slicing into squares.

Tips & Tricks for Perfect Mini Egg Brownies

✅ Don’t Overmix the Batter

Stir until just combined after adding the flour. Overmixing can lead to cakey brownies instead of rich, fudgy ones.

✅ Bake Until Just Set

You want the edges to be firm, but the centre should still have a slight jiggle. The brownies continue to cook as they cool.

✅ Use Room Temperature Eggs

This helps create a smoother, more evenly textured brownie batter.

✅ Get Creative with Toppings

Add a drizzle of melted chocolate or a swirl of caramel on top before baking. You can even mix in leftover Easter candy!

✅ Let Them Cool

For clean slices and maximum fudginess, allow the brownies to cool fully before cutting.
