Creamy Tuscan Chicken One-Pan, Easy & Flavour-Packed Dinner

Ingredients:
250g chicken breast
1 Tbsp olive oil
½ small onion, diced
2 garlic cloves, minced
½ tsp Italian seasoning
Salt and pepper, to taste
15g sun-dried tomato paste or 50g sun-dried tomatoes in oil, drained and sliced
150ml chicken stock
⅓ cup double cream (or heavy cream)
10g grated parmesan
80g baby spinach
Instructions:
1. Prep the Chicken
Cut the chicken breast in half to create thinner fillets. Season both sides with salt, pepper, and a sprinkle of garlic powder.
2. Sear the Chicken
Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Sear the chicken for 2–3 minutes on each side, until golden. Remove from the pan and set aside.
3. Sauté the Aromatics
In the same pan, add the diced onion and sauté for 2–3 minutes, until soft. Add a touch more oil if the pan looks dry.
4. Build the Flavour
Stir in the minced garlic, sun-dried tomato paste or sliced sun-dried tomatoes, and Italian seasoning. Cook for 1 minute until fragrant.
5. Make the Creamy Sauce
Pour in the chicken stock, then add the double cream and grated parmesan. Stir well to combine and let it gently simmer.
6. Finish the Dish
Taste the sauce and adjust the seasoning if needed. Return the chicken (and any juices) to the pan and simmer for 3–4 more minutes to cook through.
7. Add Spinach
Add the spinach and stir until just wilted—about 1 minute. Remove from heat and serve hot.
