Ingredients
For the Puff Pastry Layers:
2 sheets of puff pastry
(thawed if frozen)
¼ cup granulated sugar
2 tsp ground cinnamon
1 tbsp butter, melted
(for brushing the top)
For the Cheesecake Filling:
500g cream cheese, softened
½ cup sugar
1 large egg
1 tsp vanilla extract
Instructions
1. Preheat & Prep
Preheat your oven to 180°C (356°F ). Line a baking tray or square baking pan (approx. 8x8 inches) with parchment paper. Roll out one sheet of puff pastry and place it on the bottom of the tray. With a fork, poke holes in a pastry to prevent puffing.
In a small bowl, combine the ¼ cup sugar and 2 tsp cinnamon. Sprinkle half of the mixture evenly over the bottom layer of puff pastry.
Bake for 8 - 10 minutes until half-baked. Then let the pastry cool down before adding the cream cheese.
3. Make the Cheesecake Filling
In a large mixing bowl, beat together the cream cheese, ½ cup sugar, egg, and vanilla extract until smooth and creamy.
4. Assemble the Bars
Spread the cheesecake filling over the cinnamon-sugar-coated puff pastry layer. Place the second puff pastry sheet on top. Brush the top with melted butter and sprinkle with the remaining cinnamon sugar.
5. Bake
Bake for 25–30 minutes, or until the top is puffed and golden brown.
6. Cool & Serve
Let it cool completely, then refrigerate for about 3 hours to fully set before slicing. Serve as-is, or drizzle with caramel sauce or melted chocolate for extra indulgence!
