Carrot and Date Loaf Cake
A soft and moist Carrot and Date Loaf Cake with warm spices, orange zest, and a simple orange glaze. Easy, comforting, and perfect with tea or coffee.
This Carrot and Date Loaf Cake is soft, moist, and gently spiced with cinnamon and ginger. Finely grated carrots keep the crumb tender, while softened dates add natural sweetness and little caramel-like pieces throughout the loaf.
Fresh orange zest brightens the warm spices, and a simple orange glaze gives the finished cake a light, sweet finish without making it too heavy. It is an easy loaf cake for autumn baking, afternoon tea, or simply enjoying with a cup of coffee.
Servings: 8-10 - Prep: 20 min - Cook: 52-62 min - Total: About 1 hour 20 minutes + cooling
Ingredients
For the Cake
120 g pitted dates, chopped (about ¾ cup)
100 ml boiling water (about ⅓ cup + 1 tbsp + 1 tsp)
200 g carrots, peeled and finely grated (about 2 cups)
2 large eggs
140 g light brown sugar (about ⅔ cup, packed)
100 ml sunflower oil (about ⅓ cup + 1 tbsp + 1 tsp)
Zest of 1 orange
200 g plain flour (1⅔ cups all-purpose flour)
1½ tsp baking powder
½ tsp bicarbonate of soda (baking soda)
1½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp fine salt
For the Orange Glaze
60 g icing sugar (about ½ cup powdered sugar)
About 1 tbsp fresh orange juice
Instructions
1. Soak the Dates
Place the chopped dates in a small bowl and pour over the boiling water. Leave them to soak for 10 minutes. This softens the dates and helps keep the finished loaf moist.
Meanwhile, preheat the oven to 175°C conventional / 155°C fan / 350°F. Grease a loaf tin and line it with baking paper, leaving a little paper extending above the sides so the cake can be lifted out easily after baking.
2. Prepare the Dates and Carrots
Once the dates have softened, mash them lightly with a fork. Do not mash them completely smooth—a few small pieces of date throughout the loaf give it a lovely texture. Finely grate the carrots.
If the grated carrots are extremely wet and dripping with moisture, squeeze them once gently in clean hands. Do not squeeze them completely dry, as their moisture helps keep the cake soft.
3. Mix the Wet Ingredients
In a large mixing bowl, whisk together the eggs, light brown sugar, sunflower oil, and orange zest until well combined. Add the softened dates along with any remaining soaking liquid. Stir in the grated carrots until evenly distributed.
4. Combine the Dry Ingredients
In a separate bowl, whisk together the plain flour, baking powder, bicarbonate of soda, cinnamon, ginger, and salt. Mix thoroughly so the raising agents and spices are evenly distributed through the flour.
5. Make the Batter
Add the dry ingredients to the carrot mixture. Fold gently with a spatula until no visible streaks of flour remain. Avoid over mixing. Stop as soon as the batter looks evenly combined to keep the loaf soft and tender.
6. Fill the Tin
Spoon the batter into the prepared loaf tin. Spread it evenly and gently level the surface with the back of a spoon or spatula.
7. Bake
Bake for 50-60 minutes. Begin checking the loaf at around 45 minutes. The top should be golden and spring back lightly when touched. Insert a skewer into the centre. It should come out clean or with a few moist crumbs, but no wet batter. If the top begins to brown too quickly, loosely cover the loaf with foil.
8. Cool
Leave the cake in the tin for 20 minutes. Then use the baking paper to carefully lift it out and transfer it to a wire rack. Allow the loaf to cool completely before glazing.
9. Make the Orange Glaze
Place the icing sugar in a small bowl. Add the orange juice gradually, stirring until you have a thick but slowly flowing glaze. If the glaze is too thick, add a few extra drops of orange juice. If it becomes too runny, add a little more icing sugar.
10. Glaze the Loaf
Once the cake is completely cold, spoon or drizzle the orange glaze over the top. Allow the glaze to set for approximately 20 minutes before slicing. For a simple finish, drizzle the icing in thin lines over the loaf rather than covering the entire surface. Slice and serve with tea or coffee.
Tips and Tricks
✅ Soak the dates for the full 10 minutes so they soften properly and add moisture to the cake.
✅ Leave a few small pieces of date when mashing rather than making a completely smooth paste.
✅ Finely grate the carrots so they blend naturally into the crumb and cook evenly.
✅ Do not squeeze all the moisture from the carrots. Only give them a gentle squeeze if they are unusually wet.
✅ Use fresh orange zest rather than orange extract for a brighter, more natural citrus flavour.
✅ Mix the dry ingredients thoroughly before adding them to the wet mixture so the spices and raising agents are evenly distributed.
✅ Fold the batter only until combined. Overmixing can make the loaf dense.
✅ Let the loaf cool completely before adding the glaze. Warm cake will cause the icing to melt and disappear into the surface.
✅ Add the orange juice to the icing sugar gradually. It takes only a small amount of liquid to change the consistency of a glaze.
✅ For a lighter finish, drizzle the orange icing in thin lines rather than spreading a thick layer over the cake.
✅ The flavour develops beautifully after the loaf has rested for several hours, making it a good cake to bake ahead.
