Ingredients

  • 400 g ripe tomatoes (about 2½ cups, chopped)

  • 30 g red or green pepper (about ¼ cup, chopped)

  • 30 g cucumber (about ¼ cup, peeled and chopped)

  • ¼ garlic clove (optional)

  • 30 g breadcrumbs (about ¼ cup)

  • 1½ tbsp extra-virgin olive oil

  • 1 tsp red wine vinegar

  • Salt, to taste

Optional Garnishes

  • Finely diced cucumber

  • Finely diced tomatoes

  • Finely diced red or green pepper

  • Extra drizzle of extra-virgin olive oil

  • Crusty bread or croutons

Instructions

1. Prepare the Vegetables

Wash the tomatoes, pepper, and cucumber. Roughly chop the tomatoes and pepper. Peel and chop the cucumber into small pieces. If using garlic, peel the small piece of garlic.

2. Blend Everything Together

Add the tomatoes, pepper, cucumber, garlic (if using), breadcrumbs, olive oil, red wine vinegar, and a pinch of salt to a blender. Blend on high speed for 1–2 minutes until the soup is completely smooth and creamy.

3. Taste and Adjust

Taste the gazpacho and adjust the seasoning if needed. Add a little more salt, olive oil, or vinegar depending on your preference. If the soup is thicker than you'd like, blend in a small splash of cold water.

4. Chill

Transfer the gazpacho to a jug or container. Cover and refrigerate for at least 2 hours, or until thoroughly chilled. The flavours develop and improve as the soup rests.

5. Serve

Stir the gazpacho before serving. Pour into bowls or glasses and garnish with finely diced cucumber, tomatoes, peppers, a drizzle of extra-virgin olive oil, or homemade croutons if desired. Serve well chilled with fresh crusty bread.
