Ingredients

  • 4 granny smith apples

  • 30 g unsalted butter

  • ¼ cup of brown sugar

  • 1 tsp cinnamon

  • 1 tbsp. lemon juice

  • ½ tbsp. corn starch

  • 2 puff pastry sheets

  • 30 g sultanas or raisins

Instructions

  1. Peel and dice the apples, then add 1 tbsp of lemon juice to prevent them from browning.

  2. In a medium pot, melt the butter. Add the apples, brown sugar, and cinnamon. Mix well and let the apples cook for about 5 minutes, stirring occasionally, until they are soft but not mushy.

  3. Meanwhile, soak the sultanas or raisins in hot water.

  4. Stir in the cornstarch and cook until the apple liquid thickens. Drain the sultanas and add them to the apples.

  5. Unroll the puff pastry sheet onto a work surface, and cut it into 8 equal rectangles, about 3x4 inches each. Place 4 rectangles on a baking tray lined with baking paper. Add the apple filling, leaving about 1 inch around the edges. Brush the edges with egg wash (egg mixed with a splash of milk), then place the remaining 4 rectangles on top. Seal the edges with a fork dipped in flour to prevent sticking.

  6. Using a knife, cut a few small slits on each rectangle to let the steam escape during baking. Brush the top with the egg wash and sprinkle with a little sugar.

  7. Bake in a preheated oven at 190°C / 374°F for 18-20 minutes, or until the puff pastry is golden brown.
