Ingredients

  • 4 apples (used Royal Gala)

  • 180 g all-purpose flour

  • 2 eggs

  • 80 g sugar

  • 7 g baking powder

  • 180 ml whole milk

Instructions

  1. Preheat the oven to 180°C / 356°F.

  2. Grease an 18 cm (7 inches) baking tin with butter, then dust it with flour, removing any excess.

  3. In a bowl, mix the flour and baking powder.

  4. Peel and slice 2 apples into thin slices, and peel and dice the other 2 apples.

  5. In a blender, add the eggs, the flour and baking powder mixture, sugar, and the 2 diced apples. Start blending at low speed, then gradually add 180 ml of whole milk. Blend until you achieve a smooth mixture.

  6. Pour the mixture into the prepared baking tin, arrange the apple slices on top, and bake at 180°C / 356°F for about 30-35 minutes, or until a tester comes out clean.

  7. Once baked, brush the cake with apricot jam or honey mixed with a drop of hot water for a shiny finish.
