Servings: 2 - Prep: 20 min - Cook: 40 min - Total: 1 hour

Ingredients

  • 1 large ripe banana

  • 1 egg

  • 1 tsp vanilla extract

  • 100g plain flour

  • 60 g brown sugar

  • 60 g sunflower oil or vegetable oil

  • 1 tsp baking powder

  • Pinch of salt

  • 1 tsp cinnamon

  • 30 g walnuts

  • 30g dark or milk chocolate chunks or chips

Instructions

  1. Start by mashing 2 bananas with a fork. Add the egg, vanilla extract, and sunflower oil, and mix well.

  2. In a separate bowl, combine the flour, brown sugar (or a sweetener suitable for baking), baking powder, chopped walnuts, and chocolate chunks or chips.

  3. Gradually add the dry ingredients to the banana mixture and mix everything thoroughly.

  4. Pour the batter into a baking tin lined with baking paper and place it in a preheated air fryer on baking mode at 160°C / 320°F for about 35-40 minutes, or until a tester comes out clean.

  5. If the top starts to brown too much while baking, cover it loosely with foil. Let the banana bread cool completely before serving.

For serving, enjoy it as a delicious breakfast with a cup of coffee, or as an afternoon snack. It also pairs perfectly with a dollop of Greek yoghurt or a spread of butter for extra indulgence.
