Ingredients
1 large ripe banana
1 egg
1 tsp vanilla extract
100g plain flour
60 g brown sugar
60 g sunflower oil or vegetable oil
1 tsp baking powder
Pinch of salt
1 tsp cinnamon
30 g walnuts
30g dark or milk chocolate chunks or chips
Instructions
Start by mashing 2 bananas with a fork. Add the egg, vanilla extract, and sunflower oil, and mix well.
In a separate bowl, combine the flour, brown sugar (or a sweetener suitable for baking), baking powder, chopped walnuts, and chocolate chunks or chips.
Gradually add the dry ingredients to the banana mixture and mix everything thoroughly.
Pour the batter into a baking tin lined with baking paper and place it in a preheated air fryer on baking mode at 160°C / 320°F for about 35-40 minutes, or until a tester comes out clean.
If the top starts to brown too much while baking, cover it loosely with foil. Let the banana bread cool completely before serving.
